Meishan Dongpo pickled-vegetable foods
After winter greens enter the plant, water loss, crispness, salt, acidification and microbiology continue to shape the finished food. The inquiry links field, fermenter, recipe, heat treatment, package and cold chain in one lot instead of using “old crock” as a blanket process description.
Formation and regional foundations
Dongpo pickles grew from a long combination of vegetable origin, processing park, food regulation, packaging logistics and brand channels. A geographical indication applies only to products within its protected area and standard; a firm’s other seasonings do not inherit it.
Beginning with winter greens at receipt, the inquiry follows washing, cutting, salting, fermentation, desalting, seasoning, heat treatment and packing through texture, acidity, microbiology and lot identity.
Core geography: The scope covers traceable vegetables, washing and cutting, salting or lactic fermentation, desalting and seasoning, heat treatment and packing within Dongpo’s protected and production area, with limited inclusion of pickle seasonings from the same park. Restaurant dishes, all prepared foods and citywide food output are excluded.
From vegetable field to package code
Six fermentation and quality nodes
Raw material, brine, recipe, heat treatment and package code must connect.
- Raw receipt — Records origin, temperature and texture.
- Wash and cut — Controls soil, damage and size.
- Salt and ferment — Salt and acidification are time-traced.
- Desalt and season — The recipe defines product identity.
- Heat and pack — Heat and seal are validated together.
- Trace and release — Links field, vat, recipe and product.
01 · Judge raw vegetables by water loss, not origin alone
Two loads from one field can still differ.
Harvest time, cultivar, maturity, rain and transport temperature jointly set incoming crispness; an origin name does not replace receipt inspection.
Each load records plot or supplier, harvest date, weight, temperature, damage and sampling result, retaining identity before bins are mixed.
Wilting, soil and mechanical damage change salt uptake and microbial competition; extra seasoning cannot conceal raw-material problems.
02 · Washing and cutting also control cross-contamination
Clean water needs clean equipment.
Water change, sanitiser level, spray pressure and drainage direction match the soil load; clear-looking water does not mean low microbial risk.
Knives, belts and totes undergo verified cleaning between lots, while cut damage releases juice and nutrients.
Cut size affects salt diffusion and texture, so the process sets a permitted range rather than relying on visual judgement.
03 · Salting is a mass-transfer process
A salty surface does not prove the centre is ready.
Salt concentration, vegetable-to-brine ratio, temperature, thickness and turning jointly determine water loss and salt uptake.
Weighing records follow brine preparation and additions; evaporation, carryout and reuse can move actual concentration away from the nominal recipe.
The salting endpoint considers core salt, texture and later fermentation needs; fixed days alone are vulnerable to season.
04 · Fermentation records how acid develops
Sourness is not one endpoint number.
Lactic flora, salt, temperature, oxygen exposure and vegetable sugars shape acidification, so unlike vessels are not released by the same day count alone.
Titratable acidity and pH describe different properties and are read with aroma, texture, microbiology and salt.
Reused brine needs lot, filtration or treatment, chemical and microbiological records; tradition does not remove hygiene boundaries.
05 · Desalting and seasoning define the product
Pickles, side dishes and seasoning packs are not interchangeable.
During desalting, water temperature, time and changes alter salt, acidity, crispness and soluble flavour together.
Sugar, oil, chilli, spices and compound seasoning are weighed to a recipe revision and allergen controls, with rework and remnants logged separately.
Short-cycle pickles, long ferments and fish-seasoning pickles differ in water activity, heat treatment and shelf-life design and cannot share one release logic.
06 · Control microbiology and nitrite separately
One compliant result does not replace another.
Fermentation changes flora, but raw material, environment and handling can still introduce unwanted organisms; hygiene monitoring is interpreted by zone and time.
Nitrite varies with raw nitrate, flora, salt, temperature and fermentation stage; the words “natural fermentation” do not guarantee safety.
Method, sampling point, lot and limit must align before judgement; a historical average cannot release the current lot.
07 · Heat treatment and package jointly set shelf life
Storage claims begin with an intact seal.
Heat intensity matches acidity, particle size, package and target organisms, with displayed temperature checked against sensors and the cold spot.
Pouches, jars and cups differ in barrier, heat resistance and sealing, while leak tests and visual checks address different defects.
Chilled products are traced through loading temperature, transport record and receipt; ambient products also require light and heat exposure validation.
08 · Traceability connects field, vat and package code
A brand name is not a lot identity.
A finished code returns to raw lot, brine or vessel, seasoning recipe, heat record and packaging-material lot.
A mock recall tests upstream raw tracing and downstream customer and stock tracing, while mass balance exposes missing records and lot mixing.
Industry figures are compared only with matching geography, year and definition; park projects, company sales and Dongpo-pickle comprehensive output stay separate.
Sources and reading notes
Geographical indication, food-production licence, company brand and sampled lot prove different matters; project targets are not presented as realised output.
