Chengdu Pidu Pixian douban and Sichuan condiments
Pixian douban develops its flavour over time: broad beans become koji, chillies are salted, and the two streams meet in vats exposed to sun, night moisture and repeated turning. A credible lot is explained by the continuous link among vat number, weather log, maturity decision, test result and pack code.
Formation and regional foundations
Around Ande in Pidu, heritage fermenters, scaled condiment plants, Sichuan-cuisine users and packaging logistics operate in close reach. The geographical indication ties origin to a defined craft, so competition rests on stable transmission of fermentation practice, food-safety control and lawful use of brand rights.
Follow an actual vat number as broad-bean koji, salted chilli, charging date, daily turning, maturity sampling and packing release become one timeline. Brand history supplies context, but the vat record answers what happened to this sauce lot.
Core geography: The scope centres on Pidu producers lawfully using the Pixian douban geographical indication and includes locally verifiable compound Sichuan condiments, ingredient preparation, packing and food testing. Generic chilli sauce, products merely labelled elsewhere and online goods without an identified producer are excluded.
A fermentation season laid out by vat number
Six meetings of weather, material and lot identity
Every turning and covering entry returns to the same vat calendar; the maturity sample carries that history into testing and packing.
- Name eligibility — Producer, Pidu plant and special mark correspond.
- Koji lot — Broad-bean condition, koji date and culture lot are logged.
- Salted chilli — Chilli lot, salting and storage form a separate line.
- Sun and night moisture — Opening, turning, covering and weather enter the daily calendar.
- Maturity panel — Sensory, analytical and microbial results are considered together.
- Case-code sign-off — Blend lineage, label revision and release lot reach the finished pack.
01 · The story begins when the name meets its place
Pixian douban first denotes a name with boundaries of place and craft.
Local rules join Pidu production with the distinctive process, so a name on a jar must lead back to the actual producer and plant. Selling in Pidu does not automatically confer the right to use the indication on every sauce.
A heritage chronology explains how a craft travelled across generations, but it cannot identify the koji, chilli lot or label revision used for the goods in front of us. History and lot records answer different questions.
Before ordering, place the legal entity, production address, complete product name and a photograph of the special mark on one confirmation sheet. A change in any of them triggers a fresh eligibility check.
02 · Two ingredient streams keep separate identities before the vat
The records of broad-bean koji and salted chilli should not merge too early.
When broad-bean pieces enter koji preparation, supplier lot, condition, storage and issued quantity are recorded. The resulting koji receives a new internal identity that follows it to vat charging.
Chilli maturity, cutting condition and salting time influence the later heat and aroma. A place of origin alone cannot explain variation within the same supply season.
The charging sheet lists the identity and weight of koji, salted chilli, salt and other ingredients before recording the actual joining time. This makes it possible to return to the correct ingredient branch when flavour drifts.
03 · In the koji room, temperature and moisture shape the culture
Koji is not an intermediate released by colour alone.
Bed depth, culture time, temperature, humidity and aroma together describe a koji lot. Clumping, foreign odour or unusual heating is documented under that exact identity with the response taken.
An experienced maker may recognise the condition quickly, yet scaled production requires the next shift to understand the basis. Instrument readings and sensory description complement each other instead of competing for authority.
Keep an identifiable sample of each koji lot and record the end of culture, transfer and vat charging as three separate times. If holding is unexpectedly prolonged, assess it before deciding where it may be used.
04 · Open vats add weather beyond the written formula
The same formula moves at different rhythms under different sun and rain.
Opening, turning, night exposure and covering each happen at a real time. The vat calendar joins operator, weather, surface condition and response so the maturation path can later be reconstructed.
Sustained strong sun may accelerate surface moisture change, while rain alters covering decisions. Reducing a season to “traditional open maturation” loses the environmental differences that distinguish lots.
When unusual weather arrives, record under the vat why turning was delayed, covering strengthened or observation isolated. Later samples should show whether those choices altered aroma, salinity or texture.
05 · Maturity is not simply the darkest day
Aroma, savouriness, salt–heat balance and safety measures answer together.
The sensory sheet describes fermented aroma, ester notes, savoury heat, particle condition and finish separately, with sample temperature and vessel. A vague “very good” cannot help compare the next vat.
Colour responds to ingredients, light, time and blending, so it cannot alone prove complete fermentation. Chemical and microbial tests answer different questions; one attractive result does not release the lot.
The maturity panel reads vat history, sensory notes and laboratory data together, then signs a decision to continue ageing, enter a blend or move to packing. The decision date becomes a new point in the lot chronology.
06 · During blending, every vat keeps its own lineage
A consistent flavour does not erase the contributing lots.
Vats may join one finished lot according to a product target. The blend sheet lists each source vat, quantity, maturity and joining order, allowing the actual lot boundary to be calculated.
Blending moves aroma, salt–heat balance and texture toward a target; it is not a way to hide deviation inside a larger volume. Adding sound sauce does not cure a safety concern in one vat.
Record ratios and tasting results in a bench sample before production blending. If actual quantities depart from the small trial, sample the finished blend again and enter every change in the blend record.
07 · Jars, pails and food-service bags speak different delivery languages
The same sauce enters channels with different specifications and handling.
Retail packs emphasise ingredients, net content, shelf life and after-opening advice. Food-service buyers also discuss dispensing frequency, kitchen turnover and recipe fit, so format follows use rather than unit price alone.
Glass jars, plastic pails and flexible bags have different seals and transport risks, while case arrangement and board strength change with weight. An attractive front panel cannot compensate for leakage or illegible coding.
The first packed unit is checked for product name, formula revision, net content, producer, date, case code and destination language. Superseded materials are separated, counted and disposed of with a record.
08 · A swollen lid sends the timeline backwards
A service problem ends with the affected lot, not only an apology.
When a consumer or restaurant reports odour, swelling or leakage, collect photographs, pack code, purchase time, storage and opening history. With those details, the producer can choose where to enter the lot timeline.
Transport impact, hot retail storage, contamination after opening and production deviation may look similar. Brand impressions cannot assign cause; the returned item is compared with retention samples and destinations from the same lot.
The conclusion names the symptom, cause, source vats and finished lots, stock locations and corrective work. If notice or recall is needed, lot genealogy determines scope rather than treating every product under the brand alike.
Sources and reading notes
The unit of observation is always a named product lot. Producer, actual plant and mark eligibility are established at the outset; ingredient lot, vat, sampling point, laboratory sheet and case code then connect each stage. Heritage dates are kept separate from the maturity of the lot.
- Chengdu local rules place Pidu origin, the distinctive traditional process and geographical-indication protection in one industry framework.
- A bond annual report filed with the Shanghai Stock Exchange shows the corporate links among the Sichuan Cuisine Industrial City, park investment and douban operations.
- Juancheng, Dandan and Shaofenghe each publish a Pidu address and douban or Sichuan-condiment activities on their corporate sites; they are separate producers.
- Process accounts explain the sequence of koji making, salting and open maturation; a purchase specification still needs an exact product, formula, test and packing lot.
